French Onion Soup The soup is made with hollandaise cooked slowly until soft and to me one of the tastiest western cuisine soups, if cooked the right way. The secret of a delicious onion soup or French Onion Soup is that onions are cooked long and over low heat until the onions turn brown , salty and full of flavor.

Ingredients ( 6 servings )

1kg Holland onion coarsely sliced

2 chopped garlic cloves

50ml Olive Oil

1 ½ teaspoons of salt

20g Butter ( 1 tablespoons )

3 beef stock cubes

2 liters of water

1 bay leaves

2 tablespoon of Lea & Perrins Sauce

1 tablespoons of sweet soy sauce

½ teaspoon of Italian herbs

1 teaspoon black pepper

200g cheese ( Cheddar and Mozzarella )

1 slices of bread ( for each meal )

Method

  1. Slice the onion into medium -sized pieces, do not be too thin as the onions will be cooked for a long time.
  2. Heat a little cooking oil, about 50ml. When hot, add all the onions that have been sliced ​​earlier.
  3. Add 1 teaspoon of salt to speed up the cooking process. Salt will draw water out of the onion more quickly.
  4. When the onions begin to wilt and turn yellow, add 1 butter knife. Mix so that the butter is completely melted.
  5. Onions will start to turn a light brown color and then brown. This will take time 30-40 minutes. Use a small flame so that the onions do not burn.
  6. Add 2 finely chopped garlic cloves. Saute' for 1-2 minutes.
  7. Now we add 3 cubes of beef essence dissolved in 250ml (1 cups ) hot water and mix.
  8. Take this opportunity to dissolve any remaining crust.
  9. Add 1750ml or 7 cup of water again and increase the heat to a boil.
  10. Reduce heat and add: 1 bay leaf, 2 tablespoon of Lea & Perrins and 1 A tablespoon of sweet soy sauce.
  11. Add 1/2 teaspoon of italian herbs and 1 teaspoon black pepper. Even more, it's okay, follow each other's tastes.
  12. Finally 1/2 teaspoon of salt or to taste. The soup is ready to be served.
  13. Usually onion soup or onion soup is served with cheesy toast. Take a slice of sandwich bread and use a soup serving container or ramekin to apply the round shape of the bread cover. Separate the excess edges.
  14. Fill the container until almost full like this, and cover with slices of bread. Put one layer of shredded cheese.
  15. Bake in a hot 250C oven until the cheese is melted.
  16. Sprinkle some fresh herbs if you like, chives, scallions, sage or parsley.
