Lamb Briyani Rice

Briyani Kambing or nasi beriani kambing is a favorite dish of many in Malaysia. The state of Johor is famous for nasi briyani.

This Lamb Briyani recipe is very simple and suitable for those who have never tried cooking briyani. Many people think that Nasi Briyani is a complicated dish but it is actually easy to follow the steps in this video. This recipe is enough for 8 people eat and only use ordinary electric rice cookers. This recipe is prepared from my mother -in -law's recipe and is divided into 2 in three parts , briyani side dishes and briyani rice. For a more complete dish can be matched with ayam masak merah or spicy tomato chicken.

Ingredients for lamb briyani dish

2kg of lamb
60g fennel seed powder
60g cumin powder
60g minced garlic
120g ground onions
30g of white pepper powder
2.5cm ginger sliced
4 tomatoes ( cut 4 )
80g coriander leaves
80g mint leaves
80g soup leaves
10 green chili
3 tablespoon of honey
2 tablespoons of sugar
1 cans of evaporated milk
1 small tin of tomato puree
2 table spoons ghee
4 tablespoon of Tomato Sauce
50ml yoghurt
100g fried onions (200g raw onions)
1 1/2 tablespoons of salt

Ingredients for lamb briyani rice ( 8 servings )

8 basmati rice pot ( measuring cup of rice cooker )
9 cardamom seeds
9 cloves
1 piece of star anise
2 cinnamon stick
40g soup leaves
40g coriander leaves
40g mint leaves
60g fried onions
2 strands of pandan leaves
6 liters of water
6 tablespoons of salt
1 bowl of lamb or mutton briyani gravy
1 small bowl of oil from the briyani gravy
1 a little ( saffron) or yellow dye

Method

  1. Wash rice and soak in water for 20 minutes.
  2. Bring it to a boil 6 liters of water in a large pot.
  3. Add :

a) salt
b) clove
c) cardamom
d) cinnamon
e) star anise
f) Pandan leaf

  1. Add the washed and soaked basmati rice.
  2. Boil the rice so that 85-90% cook. When we bite the rice, can still taste the middle part of it which is still raw, but only a little.
  3. Pour the rice into a strainer to remove excess water.
  4. The rice will be cooked next in an electric rice cooker. The rice should be cooked immediately so that the rice does not dry out.
  5. Put a little goat gravy oil into the rice cooker. The rice will be cooked in layers.
  6. The first layer of rice is about 5cm. Make sure the rice is flattened.
  7. The second layer is mutton and gravy. Add a little more oil.
  8. Add a little fried onion, coriander leaves, soup leaves and mint leaves.
  9. Repeat steps 9,10 and 11 for the second and third layers.
  10. For the third layer add coma water or yellow dye to make the rice look more attractive.
  11. Cook in a rice cooker as usual. When cooked and light ‘keep warm’ It's on. DO NOT open it first, Wait 20 another minute before opening so that the rice can absorb water vapor.
  12. Nasi briyani kambing is ready to be served with briyani kambing.
