Fried Noodle Recipe

Along fried is a dish that is very popular among Malaysians and there are various versions of this dish. Some are dry, some are wet and just to name a few. Here I share a simple fried noodle recipe that was originally prepared by my wife and became our family favorite.

I will also share some tips and secrets for cooking Mee frying includes the importance of sauteing onions and chillies until properly cooked and crisp. One of the common mistakes made when frying noodles or making any sambal is not cooking onions and chillies until they become dark and caramelised. If not cooked long enough dimasak, there will be an unpleasant taste of raw chili and raw onions.

Before frying Mee , I also recommend, soaking for 1 minutes with freshly boiled hot water, this will avoid Mee sticks and becomes easy to fry.

Ingredients for Fried Mee

1kg of yellow noodles ( 6-8 servings )
120g beef (thinly sliced)
120g prawns
120g cuttlefish
1 tomato seeds in half 6
100g bean sprouts roots removed
100g mustard greens cut like this
6 tablespoons ground chilli
3 tablespoons of tomato sauce
4 tablespoon of oyster sauce
7 tablespoons of sweet soy sauce

Ground ingredients
3 shallots
3 cloves garlic
A little water

Method

  1. Grind the ground ingredients, onions and garlic until smooth and set aside.
  2. Heat oil and sauté the ground ingredients until crisp and starts to turn yellow.
  3. Add the chili paste and stir-fry until the chili is crispy and dark in color.
  4. Add the meat followed by the oyster sauce, sweet soy sauce and tomato sauce.
  5. Add 1/2 teaspoon of salt or to taste and 1 teaspoon of sugar.
  6. Add the squid and shrimp.
  7. Before we add the yellow noodles, boil hot water and pour over the noodles. This will soften and help to separate the noodles, so happy to be fried.
  8. Soak for 1 minutes and toss.
  9. Enter mee. Mix well and the noodles are well blended.
  10. Then add the mustard greens. Turn the noodles at the bottom of the pan up. To ease the work, I use 2 sudip.
  11. Turn up the heat and add the tomato pieces.
  12. Add the bean sprouts and turn off the heat. This will prevent the bean sprouts from becoming too soft and not crunchy. Mix well.
  13. Fried noodles are ready to serve.
