Sardines cooked in spicy coconut milk

Sardines are a very nutritious seafood and contain a variety of nutrients that are good for health such as Omega-3 fats. , vitamins and minerals. Sardines are often used in making sandwiches, sardine rolls or fried with chilli and onion.

Not many know,sardines can be cooked in coconut milk and birds eye chili. If you never tried it, I strongly recommend you do. The method is very easy and concise and very tasty. It's very different style of cooking sardines. Combining coconut milk, birds eye chili and tomato sauce from sardines will give a unique and very tasty taste.

The ground ingredients should be pounded in a mortar and pestle to get the original taste but can also be ground using a blender. While cooking , make sure the heat is not too high and constantly stir so that the coconut milk does not get split and coagulate.

Ingredients

Mashed/ground ingredients
75g (5 ) shallots
45g (3 cloves) garlic
1 inches of fresh turmeric
1 inches ginger
9 birds eye chili

425g Sardines in Tomato Sauce
250ml (1 cups) Fresh coconut milk

2 lemongrass stalks
1 tamarind slice
500ml (2 cups) air
2 teaspoons of salt
1 teaspoon of sugar
3 potatoes cut into small pieces
1 tomato cut into 4

Method

  1. Mash or grind onions, garlic, ginger and birds eye chili.
  2. Heat oil in a pan and sauté the ground ingredients.
  3. When the ground ingredients have started to brown, add lemongrass.
  4. Add 250ml or 1 cup of water and add the potatoes.
  5. Turn up the heat and cook for 10-15 minutes until potatoes are tender.
  6. Use a fork to make sure the potatoes are soft.
  7. Add coconut milk and 1/2 cup of water, 2 teaspoon of salt and 1/2 teaspoon of seasoning powder if you like. Make sure the heat is not too high and the gravy is stirred regularly while cooking coconut milk.
  8. Stir in the sardines along with the tomato sauce from the sardines.
  9. Add the chopped tomatoes and add more birds eye chilies if you want a more spicy gravy.
  10. Finally, add 1 teaspoon of sugar to balance the flavours.
